Hi I have a question, What’s the difference between “ I’m planning for my Sunday’s online classes “ and “I’m planning for my Sunday online classes?
is the second one even correct?

I would say "I’m planning for Sunday’s online classes" or "I'm planning for my online classes on Sunday".

In addition to those, I might say "I'm planning for my Sunday online class" or "I'm planning for the online class I'm taking/giving on Sunday".

You can't have two possessives together like that. It's either "my" classes or it's "Sunday's" classes. It can't be both.
