Hi,
which one is correct?
I have started to work since I have graduated from university
or I have started work since I have graduated from university
or I started to work since I have graduated from university
 
It is about time.
 
Then try:
I have been working since I graduated from university.
 
Most people would assume that you didn't work full-time while you were at university so it's a bit redundant to make it clear that you started working only after you left university. However, if the speed with which you got a job is important, you could say something like:

I started work just a week after graduating [from university].

I have put "from university" in brackets because in BrE, it would be unnecessary. We don't graduate from anywhere except university. I'm aware, though, that in the USA, for example, students also graduate from high school.

You could use "since" if there is something remarkable about what has happened since university. For example:

I've been working for the same company since I graduated. I'll have been there for 35 years next week!
 
Also, I have worked since I graduated....
