1. I'd love to meet my uncle.
2. I'd love to have met my uncle.

If my uncle has died, should I use #2, because it's impossible to meet him anymore.

You made a punctuation error. Can you find it?

"If my uncle has died, should I use #2? Because it's impossible to meet him anymore." Is it correct?

"If my uncle has died, should I use #2? Because it's impossible to meet him anymore." Is [STRIKE]it[/STRIKE] that correct?
Yes. It would be more natural to say it this way:
Is this correct?

"If my uncle has died, should I use #2? Because it's impossible to meet him anymore."

Why can't I use "it"? I finally found an opportunity to ask about this question!
"Is it correct?" is too general. You tell your reader a little more about what you're asking about by "pointing" at it. "Is that [thing I just said] correct?" does so. My re-ordered version does the same thing. It says "Is this [thing I'm about to say] correct?"
