The photo is from "Oxford Discover Grammar" by Helen Casey. What does "putting air" mean in this context? "We need to put air in the mixture."

It means beating the mixture manually or with an electric mixer, especially the eggs, sugar and butter initially, until it is fluffy with air mixed into it.
 
I would be inclined to ask the same question Rachel. I would prefer to read something like, "....and beat the mixture until fluffy".
 
Asking if the eggs were liquid is a strange question. They wouldn't be gaseous or solid if used as an ingredient like this.
 
It's an odd question for me, as many will not know what whisking, etc, does.
