Why is the phrase 'sport competitions' not acceptable? Is there any grammatical error if we use sport as a singular noun before the word competition?

Who told you it isn't acceptable? Please give us a complete sentence containing the phrase so we can tell you whether we'd use the phrase or use something else.

I looked up the word 'activity' in Longman Dictionary. I found this:
Don’t say ‘make an activity’. Say take part in an activity or be involved in an activity.Don’t say ‘sport activity’. Say sports activity.
 
You didn't ask us about collocations with the word "activity". You asked us specifically about the collocation of "sport" and "sports" with "competition".

It's not colloquial.

If you want to sound like a native English-speaker, don't use it.
