Do we need an article in this sentence? In BrE we don't put an article if a student is at university to study. And what about extracurricular activities attending a gym, for example), is it also part of being a student, or does the university become just a building and we need the (to stay at the university)?

Do you ever stay at ___ university after classes?
:?:

I would probably say something like "Do you ever stay on/stay around at university after classes?"

In both cases you describe, the article the is used in AmE.
