Which is correct?

1. They enjoy the taste of hamburger.
2. They enjoy the taste of hamburgers.

Both are correct.

1. They like the flavor of ground beef.
2. They like the flavor of a sandwich which includes a fried patty of ground beef.

I normally eat my hamburger cooked.
:)

Note that AE ground beef = BE minced beef or just mince.

Thank you.
If I said "I had some hamburger last night", would it mean "I had some cooked ground beef"?

That doesn't really work for me. Hamburgers are countable. If you had one or more, your sentence would clearly indicate that.

I had a delicious hamburger last night.
I enjoyed that hamburger last night.
I was hungry, so I had two hamburgers last night.
What did you eat last night? ... An expensive, juicy, flame-grilled hamburger.

If I had cooked mince meat to make any other dish, I would not use "hamburger" in my sentence.

Thank you.

No. A hamburger/beefburger is minced beef compressed into a thin, round patty—fried, barbecued, grilled or griddled and usually served in a bread bun, but not necessarily.

Probably. However, that's not something I'd be likely to say. That's because I usually (99.9% of the time) eat my hamburgers on buns. Thus, I would say:

I had a hamburger last night.

Or:

I had two hamburgers last night.

(If I have more than two it's probably those small ones we call sliders.)
