I'd just like to make sure that I'm not making any mistakes here.

"I am going to do a tour in Mexico"
"I am going to tour Mexico"

I am not refering to concerts or shows. Are these correct?

They are certainly both correct. The first is a little unusual in my neck of the woods. We'd be much more likely to say "make a tour of Mexico." Other varieties of English may be fine with "do a tour in".

They're both possible with appropriate sentence-ending punctuation. The first is a somewhat casual way to say you're going to take an organized tour. The second means you're going to travel around the country.
