I'd appreciate it if somebody could tell me if the following verbs collocate with 'roleplay' (as a classroom activity):

do a roleplay
act out a roleplay
perform a roleplay

I'd use "do".

I agree. "Do" is the simplest, but you can use those others too.

Role-play is also a verb. You can just say "We are going to role-play" or "We will role-play the dialogues learned in Unit2" or whatever.

I would use "role-play" as a verb.

If forced to use some other verb, I would use "act out."
