1) We are not working coming two Saturdays.
2) We are not working on coming two Saturdays.
3) We are not working for coming two Saturdays.

Which is the correct one?

None of them is natural.

I would say:

We are not working this Saturday or next.

I think you can say "We are not working this coming Saturday". You can also say " We are not working this Saturday or the next one".

We are not working this upcoming Saturday and the next.

Not a teacher.

'Upcoming' is not very natural; 'coming' suffices.

With the negative 'not working', it would be more natural to use 'or' than 'and'
We are not working this coming Saturday or the next.

ps. Please remember to add 'Not a Teacher' when you respond to a question. I added it this time for you,
