What different between 2 sentences ?

1. I saw that man take you bike.

2. I saw that man taking you bike.

What different between 2 sentences ?
and if wrong, can you help me to fix it, please

(More:

a. I saw that man run out of the building.

b. I saw that man running out of the building.)

2. I saw that man taking your bike.

What is the differen[STRIKE]t[/STRIKE]ce between the 2 sentencesno space?
In #1, you saw the whole act, the theft.
In#2, you saw him while he was in the middle of the action.

As the taking of a bike is normally an action of short duration, there is not a big difference in meaning between the two.

However, there is a real difference between these two:

3. I saw him run a marathon.
4. I saw him running a marathon.

In #3, you saw the whole two or three hours of the running.
In #4, you saw only a part, possibly a small part.
 
Is it correct to say " I saw that man took your bike" when I saw the whole act, the theft?

If you want to use "took" instead of "take", you could say, 'I saw that that man took your bike'.

Do you know why 'I saw that man took your bike' is grammatically incorrect?

'do' represents the base form of the verb.
I saw him rob....../ I saw him robbing.........

No. "I heard that somebody said" or "I heard somebody say".
