Not the first one. The second and third are okay. So is "Rabbits are faster than tortoises."

You could say "rabbit is faster than tortoise" if you are talking about how quickly the meat cooks.

I have nothing to add to the earlier replies, sash, except to comment that in my experience, it's usually hares - not rabbits - that race tortoises.
