A rabbit is faster than a tortoise
The rabbit is faster than the tortoise
 
Not the first one. The second and third are okay. So is "Rabbits are faster than tortoises."
 
You could say "rabbit is faster than tortoise" if you are talking about how quickly the meat cooks.

the problem here is that I don't know if I use "a" or "the"

They are all incorrect as they do not end in full stops.

Ok if we put the full stop, then which is correct Mr Rover?
 
I have nothing to add to the earlier replies, sash, except to comment that in my experience, it's usually hares - not rabbits - that race tortoises.
