Why can't it be "such much food" ?

I searched "food" in the dictionary and found it was uncountable noun. But the right answer is " such a lot of food". I wonder why "such much food" can't be used?

It isn't idiomatic English. We say "so much food".

Because "much", being an adjective, cannot be modified by another adjective. It can only be modified by an adverb, and "so" is the adverb corresponding to the adjective "such".

To take another example, when I was young fun was almost exclusively a noun, and was therefore often modified by such, e.g. "It was such fun". Nowadays fun has largely become an adjective, and today's generation usually use "It was so fun".
