I can't imagine you mean the city. Perhaps the Farsi word for the sauce named after the city is bologna...? If so the 'English' is bolognese (though I had to put the English in quotation marks, as the ingredients for this sauce - in most English kitchens - have little connection with the bolognese made in that city.
