Actually, you can leave "my" in, but it's more natural to say "lying in bed".

For the final sentence, "It also helps me relax" is more natural.

If you say "I enjoy lying in bed and reading a book", it would not be possible for the listener/reader to tell whether you enjoy doing those two things independently or at the same time.
"I enjoy lying in bed reading a book" makes it clear that what you enjoy is reading a book while you are lying in bed.
