Is the article necessary in "to do (the) shopping"?

Yes. otherwise, just say "to shop".

Specifically, when you refer to "the shopping," this means a regular, habitual type of shopping, such as the regular list of groceries in English speaking countries: bread, milk, cheese, and so on.
