I recently checked to (see)(find out) which of my friends are not on Facebook.

I would use "see". "check to see" is the usual way to say it.
 
"I recently checked who of my friends is not on Facebook"

*Who of...is not grammatical.

Replace with either who among... (v. formal) or which of....
