Some people are eloquent privately or at home. But when they have to speak to the public, they would all of suddent become empty-headed and stammering. This phenomenon is called Public Speaking Phobia.

Is "become empty-headed" natural in English?

I've been wondering whether some phrase like "his head becomes empty when he tries speaking in English" sounds natural.

It's natural enough.
 
No. They become tongue-tied or their mind goes blank.
