Sentence (1) is just fine.

Sentence (2) is awkward, non-idiomatic and ungrammatical. If this is a homework assignment, try again.

(2) It's a pity that her stay was so short that she couldn't enjoy everything.

This sentence is much better. It is error-free and consistent with conversational English.
